Breaking Barriers: Dr. Sonat Birnecker Hart's Leadership and Legacy in Craft Distilling

This Women’s History Month, we honor the trailblazing achievements of Dr. Sonat Birnecker Hart, the visionary co-founder and president of KOVAL Distillery, one of the largest independent woman-owned craft distilleries in the United States. Through her leadership, KOVAL has become a global name in organic spirits, celebrated for its commitment to sustainability, innovation, and quality.

As the driving force behind KOVAL’s new luxury line, Thresh & Winnow, Dr. Birnecker Hart has once again raised the bar in the craft spirits industry. Designed by Dando Projects—led by her sister—Thresh & Winnow features limited-edition whiskeys and Japanese botanical-inspired gins. This stunning collection of organic, award-winning spirits, including Double Gold medalists and 90+ point-rated bottles, showcases the artistry and excellence that define both KOVAL and Thresh & Winnow.

A Visionary Leader in Craft Distilling Dr. Birnecker Hart’s journey is nothing short of extraordinary. After leaving her tenure as a full professor with many publications and an international career, she dedicated herself to revolutionizing the craft distilling industry. Her contributions include:

  • Transforming Illinois’ liquor laws—unchanged since Prohibition—to foster a more inclusive and innovative distilling community.
  • Expanding KOVAL’s reach to over 45 export markets, making it an international powerhouse for organic spirits.
  • Educating thousands on distillation through Kothe Distilling Technologies, the consulting firm she co-founded with her husband.

Leadership in Times of Crisis During the COVID-19 health crisis, Dr. Birnecker Hart demonstrated unparalleled leadership by pivoting KOVAL’s production to create and donate hand sanitizer to medical organizations, first responders, and community nonprofits. This selfless act earned KOVAL the City of Chicago Medal of Honor and further solidified her reputation as a leader who values community impact.
